G. Theophanous Winery is a boutique winery in Pissouri shaped by natural wines, rare grape stories and deliberate experimentation. We do not simply follow the expected path. We test, observe, adapt and let the Pissouri terroir speak through every bottle.
Our Winemaking Philosophy
Our philosophy is built around one simple idea: wine should have identity. It should show where it comes from, how it was made and why it matters. At G. Theophanous Winery, we put into practice what others only discuss. From Soultanina transformed into wine, to natural, unfiltered and bottle-aged whites, to a coastal Maratheftiko vineyard planted against convention, our wines are shaped by curiosity, tradition and the Pissouri terroir.
Natural wine in Cyprus is still evolving. There is no fixed national template that defines it in a simple way. Through our own work, and through collaboration and discussion with local authorities and the wider wine community, we are helping explore what natural winemaking can mean in a Cypriot context.

Soultanina Into Wine
Soultanina is widely known as a table grape. At G. Theophanous Winery, it became something more.
In 2022, the winery released a Soultanina wine, continuing an experimental path first explored by winemaker Georgios Theophanous as early as 1999. What began as curiosity became part of the winery’s identity: taking something familiar from Cypriot land and giving it a new expression in the glass.
A grape people thought they knew. A wine they did not expect.
Natural, Unfiltered,
Bottle-Aged
Our natural wine philosophy is based on minimal intervention and respect for the wine’s own character. We do not try to polish every edge away. We allow texture, depth and individuality to remain.
Our bottle-aged white wines are unfiltered, allowing them to develop naturally over time. They are not made to be standardised or stripped back. They are made to show character, patience and the difference that comes from a more honest approach to winemaking.
We do not filter the story out of the wine.


Rosé Made With Intention
Our onion-skin coloured rosé is not treated as an afterthought. It is not made by taking finished red and white wines and blending them together after fermentation.
Instead, mixed grape varieties ferment together into wine. The result is a rosé with natural colour, texture and identity, shaped from the beginning rather than corrected at the end.
Not a failed red. Not a diluted white. A rosé with purpose.
Maratheftiko by the Sea
Maratheftiko is normally associated with higher elevation vineyards. In 2026, we planted it close to the sea in the Pissouri terroir.
Planted on Saint George’s Day
The Maratheftiko plants arrived on 23 April, Saint George’s Day. By 24 April, they were planted. For a winery carrying the Theophanous family name, the timing made the story even more meaningful.
Designed Around Wind
Maratheftiko is a demanding grape variety and needs careful pollination. Pollinator varieties, including Spourtiko and Xynisteri, were planted in a 1 to 3 ratio, aligned south to north with the wind direction.
The Xynisteri Arbor
A hanging vine arbor crosses the field through the middle, planted with Xynisteri. It acts as a visual landmark and a practical pollination feature, sitting higher than the plantation to help carry pollen across the field.
Fighting the Norm
Maratheftiko is often grown in higher areas, but Cyprus offers unique advantages. The island is phylloxera free and its dry conditions restrict excessive leafy growth, encouraging the vine to focus energy on grape quality.
This is not just a winery. It is a living experiment visitors can walk through.
